Our Favorite Things: Blue Chip Sandwiches

The thee-day Blue Chip Regatta, sailed at the Pewaukee Yacht Club for the last 49 years, is the best regatta to be found, with approximately 20 of the best young sailors from across the country - from Barnegat Bay to Grand Lake Colorado and all points between. The E-Scow is one of the most refined and fastest one design classes in the world (easily breaking 20 knots going down wind). Each year, the regatta includes a carefully selected Mystery Guest (always a world champion sailor), who seldom wins. The race offers the best imaginable hospitality on and off the race course, features the tradition of walking the bar, and often coincides with the first real cold front of the year, with smokin’ breezes and changing colors! What is not to like? Next year will be the 50th anniversary, and plans to celebrate are well underway!

And now the Blue Chip sandwiches enjoyed by sailors, judges, spectators and anyone else lucky enough to get a bite!

Blue Chip Sandwiches taken from the Pewaukee Yacht Club cookbook, THE PERFECT COURSE.

For 4:

½ C butter

4 Tbsp. horseradish mustard

2 tsp. poppy seed

4 Tbsp. chopped onion

Ham, Swiss cheese and buns

Combine ingredients and mix lightly. Split buns and spread mixture on both sides of bun. Add ham and Swiss cheese.

Wrap individually in foil or cover pan of sandwiches with foil.

Bake for 30 minutes at 350 degrees.


For 36:

3 sticks butter

3Tbsp.dry mustard

3 Tbsp. poppy seed

3 Tbsp. dry minced onion

4 lb. ham

3 (8oz.) pkg. Swiss cheese

Prepare the same as for 4.

Great for a crowd or a quick Saturday lunch (leftovers can be individually frozen).
