Our Favorite Things: Cucumber Jell-O Mold

Spring is finally here, and summer will be right behind! Summer makes me think of chicken salad – a fabulous lunch for women or a light dinner any day of the week. We have been making this Jell-O mold for years, and the recipe is always requested. In fact, one of our sewing club members introduced us to this special lunch, and after that, we refused to go to her house unless she served it! The Jell-O mold is made in a ring form with a large enough opening to put your favorite chicken salad. Using a large platter, invert the mold and mound the center with chicken salad – then garnish with lettuce, avocado, tomato and hard boiled eggs. This can be served with your favorite salad dressing and a wonderful loaf of bread (we like La Brea). For dessert, she always made her homemade schaum torte with seasonal strawberries, ice cream and whipped cream. That’s a WOW meal – hope you enjoy!

1 large package of lime Jell-O

1 ½ C hot water

4 t lemon juice

4 t grated onion

2 C grated cucumbers with peels

1 C mayo

1 C sour cream

Dissolve Jell-O in hot water and cool.

Grate cucs and onion; add lemon juice, sour cream and mayo.

Add cooled Jell-O, stir and pour in ring mold.
